Marble Cupcake with Marshmallow Frosting


It's Sunday bake day! What better way to release stress than baking. Baking is just one of those things I do whenever an exam just ended or whenever I am not in a good mood. Or even if I just want to have fun and enjoy the day. It just removes all the stress that I have. Plus it is fun to do and the result is something you will surely love. I have never made a marble cupcake ever in my life. This is the first one and I'm actually quite glad that it turned out how I expected it to be.

Servings: 20 Cupcakes
To start with, you'll need the following for the cupcake batter:
• Marble Cake Mix (You can also make your favorite vanilla and chocolate cake from scratch)
• 3 Large Eggs
• 1 Cup Water
• 1/3 Cup Vegetable Oil

Directions:
1. Preheat oven to 350ºF.
2. Place your cupcake liners in the cupcake tin.
3. In a bowl, blend cake mix, water, eggs, and vegetable oil until moistened.
4. Measure 1 cup cake batter into a small mixing bowl.
5. Blend cocoa in the small mixing bowl.
6. Spoon batters alternately to make the marble effect.
7. Pop them inside the oven and bake for about 10-15 minutes.

While cupcakes are cooling, make your marshmallow frosting. You will need:
• 2 Egg Whites
• 1 1/2 Cups White Sugar
• 1/3 Cup Water
• 1 teaspoon vanilla extract
• 1 Cup mini marshmallows

Directions:
1. Put egg whites, sugar and water on top of a double boiler.
2. Beat until mixed well. Beat constantly until it forms peaks when beater is raised then remove from heat.
3. Stir in marshmallows and vanilla extract until melted.

Once cupcakes have been cooled, frost it. Design your cupcakes as you wish and it's ready to be served!
